Freeze whole red tomatoes to save time and energy. Pick ripe, unblemished tomatoes. Wash and pat dry. Place on a freezer rack. The frozen tomatoes add great vine-ripe flavor to soups, stews and sauces. Use in any recipe which calls for a can of tomatoes. Frozen tomatoes have less sodium, a bonus for those with high blood pressure. If the tomato skin is unappealing, just skim it from the pan. People who buy large quantities of tomatoes from a farmer’s market can do the same.
